Stollen Bites
Stollen Bites von Spoonsparrow – klein und saftig-süß sind sie im Nu verputzt. Ideal zum Verschenken und Genießen.
Ingredients
- 150 g raisins
- 50 ml rum
- 40 g lemon zest
- 40 g orange zest
- 100 g Ground Almonds
- bitter almond flavor
- 2 tbsp vanilla sugar
- 1 tsp mace flower
- 1 tsp ground clove
- 0.5 untreated lemon (zest and juice)
- 250 g flour
- 0.5 block fresh yeast (21 g)
- 50 g sugar
- 60 ml lukewarm milk
- 200 g soft butter
- 1 pinch salt
- flour (for working)
- powdered sugar (for dusting)
Instructions

Soak the raisins in rum. Finely chop the lemon and orange zest. Combine with the raisins, almonds, bitter almond flavor, vanilla sugar, mace, clove, lemon juice and zest, mixing well. Place flour in a bowl and form a well in the center. Break in the yeast, add sugar and milk, stir, cover and let rise for about 30 minutes.

Add 150 g butter pieces, salt, and the nut mixture to the dough and knead into a smooth consistency. On a floured surface roll into a rectangle and place on a parchment-lined small baking tray (approx. 30x20 cm). Press evenly to the edges. Cover and let rise again for about 30 minutes.

Preheat the oven to 200°C with fan and top heat.

Bake the Stollen dough in the oven for about 40 minutes until golden brown. Remove, brush with remaining butter, allow to cool, dust with powdered sugar, cut into cubes. Enjoy the Stollen Bites.
