Ingredients

  • 200 g Asian egg noodles
  • 1 piece fresh ginger (about 5-6 cm)
  • 2 cloves garlic
  • 1 red chili pepper
  • 4 Spring Onions
  • 100 g shiitake mushrooms
  • 4 Tbsp sunflower oil
  • 2 fresh coriander stems

Instructions

    Bring plenty of salted water to a boil and cook the noodles for 2 minutes, then drain and rinse.

    Peel and finely chop ginger and garlic. Slice the chili lengthwise, deseed, and cut into thin strips. Trim and finely chop spring onions. Pull leaves from the coriander stems. Clean and slice the mushrooms.

    Heat oil in a wok or large pan. Sauté garlic, ginger, chili, and mushrooms for about 3 minutes while stirring vigorously. Add noodles and spring onions. Stir-fry for another 3 minutes.
