Ingredients

  • 300 g broccoli florets
  • 300 g sirloin steak
  • 1 red bell pepper, 1 yellow bell pepper, 1 green bell pepper
  • 1 Garlic clove
  • 1 stalk leek (about 200 g)
  • 100 g fresh bean sprouts
  • 3 tbsp oil
  • 3 tbsp Soy sauce
  • pepper from the grinder
  • 2 tbsp dry sherry
  • Salt
  • 1 tsp Sambal oelek
  • 0.5 tsp Sugar
  • 1 tbsp Lemon Juice

    Let broccoli steam until tender. Slice beef into 0.5 cm thick strips. Wash, core, and dice bell peppers; remove white membranes. Peel garlic clove. Clean leek and cut diagonally into ~1 cm wide slices. Rinse bean sprouts and drain. Heat oil in a wok or large heavy pan over high heat. Brown beef in two batches, stirring, for 2 minutes each side, then remove. Immediately toss with 2 tbsp soy sauce and pepper.

    Stir‑fry peppers in hot fat for 3 minutes. Add garlic, broccoli, and cook another 5 minutes while stirring. Season with 1 tbsp soy sauce, sherry, a pinch of salt, pepper, sambal oelek, sugar, and lemon juice. Add leek and stir for 2 more minutes. Combine sprouts and beef with the sauce, let sit briefly.
