Stir-fried Asian noodles with beef strips from Spoonsparrow bring spring to the table in no time.

Ingredients

  • 250 g dried rice noodles
  • 2 tbsp oil
  • 3 cloves garlic (chopped)
  • 2 tsp red chili peppers (chopped)
  • 400 g beef (for quick stir‑fry, sliced into thin strips)
  • 60 g Chinese scallions (chopped)
  • 2 tbsp fish sauce
  • 2 tbsp Lime juice
  • 2 tsp brown sugar
  • 40 g bean sprouts
  • 40 g peas (frozen)
  • 40 g canned soybeans
  • spring onion greens (cut diagonally into rings)

Instructions

    Soak noodles in warm water for 10 minutes, then drain and set aside.

    Heat oil in a wok or large skillet. Add garlic, chili, and beef; stir‑fry for about 4 minutes until cooked, then add the drained noodles, cover, and cook for another minute.

    Add fish sauce, lime juice, and sugar to the wok, stirring well until everything is evenly heated. Add soybeans sprouts, peas, and canned soybeans, let simmer, season to taste, and serve garnished with spring onion greens.
