Ingredients
- 1 rabbit (prepped for kitchen use, about 1.5 kg)
- 6 tbsp Olive oil
- 4 cloves garlic
- 4 sprigs tarragon
- 12 Cherry tomatoes
- 1 onion
- 200 ml dry white wine
- Salt
- Pepper (freshly ground)
- parsley (for garnish)
- sage (for garnish)

Wash the rabbit, pat dry and cut into 10-12 pieces. Mix 4 tbsp olive oil with pepper. Peel and press the garlic cloves. Finely chop tarragon, mix in, and rub onto the rabbit pieces. Wash the cherry tomatoes. Peel, halve, and slice the onion into thin strips. Heat the remaining olive oil in a large pot and brown the rabbit pieces all around.

Add the onion, sauté, pour in wine, cover, and simmer for 40 minutes over low heat. Add the tomatoes 15 minutes before the end of cooking and continue to simmer. Season with salt and pepper, garnish with parsley and sage. Serve with fresh baguette if desired.
