  • flour
  • fat (for frying)
  • 1 onion
  • bay leaf
  • Salt
  • Pepper
  • marjoram
  • Madeira (or red wine)
  • sour cream
  • lemon juice (or vinegar)

    Beef kidneys are suitable only for cooking or stewing; they remain tough when fried. After removing fat and connective strands, rinse the kidney, optionally blanch it to reduce strong odor. Slice finely, briefly coat in flour, then fry in hot fat with sliced onions until golden brown. Season with salt, pepper, add bay leaf and a pinch of marjoram, pour over water or broth, and let simmer on low heat until the sauce thickens. When tender, finish with wine, lemon juice or vinegar, and sour cream. Serve with mashed potatoes or boiled potatoes and fresh salads.
