Ingredients

  • 800 g pike fillet (4 pike fillets)
  • 2 tbsp lemon juice
  • 1 bunch spring onions
  • 2 carrots
  • 2 tbsp olive oil
  • 250 ml vegetable stock
  • 2 tbsp Apple cider vinegar
  • 1 tbsp agave syrup
  • Salt
  • Pepper
  • parsley (for garnish)

Instructions

    Wash the pike fillets, pat dry, drizzle with lemon juice and let sit covered. Wash and trim spring onions, cut into 5 cm strips. Peel carrots, trim and cut into 5 cm long, 0.5 cm thick sticks. Heat olive oil in a large pan and sauté the carrots first.

    Add spring onions and cook until lightly browned. Pour in vegetable stock and apple cider vinegar. Stir in agave syrup, pat fillets dry, season with salt and pepper, and place on top of the vegetables. Cover and steam each side for 3 minutes. Season with salt and pepper, plate fish with vegetables, garnish with parsley.
