Steamed Cauliflower
Steamed cauliflower with paprika sauce: With 85 calories and 2 grams of fat your body receives beneficial fiber, potassium, vitamin E & vitamin C.
Ingredients
- 600 g small cauliflower (1 small head)
- 1 Organic lemon
- Salt
- 300 g large red bell pepper (1 large red bell pepper)
- 1 Shallot
- 50 ml classic vegetable broth
- Pepper
- 1 tsp ground coriander
- 0.5 tsp olive oil

Clean, wash the cauliflower, drain in a sieve and cut into large florets.

Rinse the lemon hot, dry it, and thinly peel with a paring knife.

Fill a pot about 2 cm high with water. Add two-thirds of the lemon zest, bring to a boil, and season with salt.

Place the cauliflower florets in a steamer basket or insert and steam over boiling lemon water on medium heat for 18-20 minutes.

Meanwhile, halve the bell pepper, remove seeds, wash, and slice into strips. Peel and dice the shallot.

Bring vegetable broth to a boil in another pot. Add the pepper strips and shallot cubes, cover, and simmer gently for 10-12 minutes.

Remove the paprika-shallot mixture from heat and puree with an immersion blender in the broth. Season with salt, pepper, coriander, and olive oil.

Serve the cauliflower florets with the paprika sauce, sprinkle remaining lemon zest strips on top.
