Steak with Beans and Cheese

Ingredients
- 600 g filet (4 filet steaks)
- 2 tbsp oil
- 320 g cheese (4 slices)
- 2 tbsp flour
- 1 tbsp butter
- 1 can thick beans
- 800 g fresh spinach
- 2 Tomatoes
- 0.5 yellow bell pepper
- 1 tbsp balsamic vinegar
- 1 tbsp Lemon Juice
- 1 clove garlic
- Salt
- Pepper
- 3 leaves chopped basil
- Tabasco (to taste)

Wash, trim, and rinse the spinach; blanch it in lightly boiling salted water until wilted, then drain, shock in cold water, and let dry. Drain the beans and let them dry. Toss the spinach with butter in a pan, add the beans, and season with salt and pepper.

Rinse the steaks, pat dry, and season with pepper. Sear them in the pan on both sides until desired doneness is reached.

Coat the cheese slices lightly in flour and fry them in a pan from both sides until golden yellow.

Tomato salsa: briefly blanch the tomatoes, shock in cold water, peel, quarter, core, and finely dice the flesh. Wash, trim, halve, core, remove the white skin of the bell pepper, and dice very finely. Mix the tomato cubes with the pepper, balsamic vinegar, and lemon juice. Peel and press the garlic, then season with salt, pepper, chopped basil, and Tabasco to taste. Cover and refrigerate until serving.

Layer the spinach-bean mixture on a preheated plate; top with steak, cheese, and tomato salsa.
