Ingredients

  • 250 g red cabbage
  • 250 g White cabbage
  • 150 g celeriac
  • 2 carrots
  • 250 g green asparagus
  • 1 l vegetable broth
  • Salt
  • Pepper
  • 0.5 bunch Chives

Instructions

    Clean and wash both types of cabbage, then cut into fine strips. Wash, peel, and finely dice the celeriac and carrots. Peel the lower third of the asparagus and cut the stalks into small pieces.

    Season the broth with salt and bring to a boil in a pot. Add all the vegetables and simmer over low heat for about 10 minutes. Season with salt and pepper and ladle into bowls.

    Wash the chives, shake dry, roughly chop, and serve the soup garnished with them.
