Ingredients

  • 1 kg pork belly (ready to cook, boneless)
  • 2 tbsp sharp mustard
  • 2 tbsp freshly chopped parsley
  • 1 tbsp freshly chopped marjoram
  • Salt
  • pepper (ground)
  • 250 ml meat broth

Instructions

    Preheat the oven to 160°C fan.

    Wash the meat, pat dry and place skin side down on the work surface. Brush with mustard. Sprinkle with parsley and marjoram and season with salt and pepper. Roll lengthwise and tie with kitchen twine.

    Pour the broth into a roasting pan. Place the roll roast seam side down in the pan, cover, and braise in the oven on the lowest rack for 1.5-2 hours until tender.

    Increase the oven temperature to grill mode. Remove the pan. Place a rack on the middle rack (underneath a fat tray) in the oven. Take the roast out of the pan, season with salt, and grill in the oven for about 30 more minutes until crisp. Turn occasionally so it browns evenly all around.

    Remove the twine and serve sliced.
