Spinach Tart with Almonds and Raisins

- 100 g flour
- 100 g ground almond kernels
- 1 tsp sugar
- 0.5 tsp Salt
- 125 g butter
- 2 egg yolks
- 250 g fresh spinach leaves
- Salt
- 150 g crème fraîche
- 100 ml milk
- 2 Eggs
- 3 tbsp Raisins
- pepper (ground)
- nutmeg
- 3 tbsp almond slivers

Mix the flour, ground almonds, sugar and a pinch of salt in a bowl. Add the cubed butter and egg yolks, then cut everything together with a knife until small dough crumbs form. Quickly knead into a dough by hand, shape into a ball, wrap in cling film and chill for about 30 minutes.

Preheat the oven to 180°C (350°F) fan‑fry. Butter and flour the tart tins. For the filling, rinse, wash, trim and dry the spinach, then blanch it in boiling salted water until wilted. Remove, shock in cold water, drain well and chop. Whisk the crème fraîche with milk and egg, seasoning heavily with salt, pepper and nutmeg.

Roll out the dough on a lightly floured surface. Cut four slightly larger circles than the tins and line them, forming a rim. Distribute spinach and raisins into the tins, pour over the egg‑milk mixture and bake in the preheated oven for about 30 minutes until golden brown. Sprinkle almond slivers over the top during the last 10 minutes. Remove and serve warm or cold.
