- 50 g Parmesan
- 50 g flour
- 250 ml milk
- 4 eggs
- 125 g spinach
- 1 tbsp walnut kernels
- 4 souffle cups
- butter (for the cups)

Wash, rinse, and drain the spinach in a pot of lightly boiling salted water until wilted. Drain, shock in cold water, squeeze out excess moisture, pat dry, and finely chop.
