Spinach Pesto

Ingredients

  • 125 g fresh young spinach
  • 1 Garlic clove
  • 2 tsp capers
  • Salt
  • Pepper (freshly ground)
  • 50 g freshly grated Parmesan
  • 50 g chopped hazelnuts
  • 100 ml olive oil

Instructions

    Wash the spinach, pat dry and trim. Peel and roughly chop the garlic clove. Drain the capers.

    Blend the spinach, garlic, capers, and nuts in a blender with a little oil until smooth. Add more oil until the pesto reaches the desired consistency. Transfer to a bowl, then add the Parmesan, stirring in a bit more oil if needed. Season with salt and pepper.
