Ingredients
- 450 g puff pastry (frozen)
- 750 g fresh spinach
- Salt
- 1 onion
- 2 Garlic cloves
- 50 g Pine nuts
- 3 tbsp olive oil
- black pepper (ground)
- nutmeg
- 200 g ricotta
- 4 eggs
- 400 g quark
- 12 black olives (pitted)
- fat for greasing the pan

Cut decorative shapes from pastry scraps or use a pastry wheel to decorate the pastie. Mix half a yolk with a few drops of water; brush the pastie with this mixture. Bake in a preheated oven at 200°C (bottom heating) for about 50 minutes. If the pastie darkens, cover with foil. Serve warm or cold.
