Ingredients

  • 250 g fresh young spinach
  • 100 g mushrooms
  • 1 Red Onion
  • 2 tbsp white wine vinegar
  • 4 tbsp olive oil
  • 1 tsp walnut oil
  • 1 Garlic clove
  • Salt
  • 1 pinch sugar
  • black pepper (freshly ground)
  • 1 tbsp chopped chives (optional)

Instructions

    Wash the spinach briefly like a salad, then drain well in a colander.

    Clean the mushrooms and slice them thinly. Halve the onion and cut into fine half-rings.

    Whisk together the vinegar with the oils, finely minced garlic, spices, and chives to make the dressing.

    Arrange the salad ingredients on four plates and pour the dressing over them.
