Spinach Chili Pasta with Parmesan

Ingredients

  • 100 g fresh young spinach
  • 2 red chili peppers
  • 50 ml Vegetable broth
  • 2 tbsp olive oil
  • 400 g linguine
  • Salt
  • Pepper
  • 4 tbsp freshly grated Parmesan

Instructions

    Wash the spinach, rinse thoroughly and shake dry. Wash the chilies, halve them, remove seeds and dice into small cubes. Heat the vegetable broth in a pot and add the chili cubes and olive oil.

    Cook the pasta in plenty of salted water according to package instructions until al dente. Drain and let rest. Add the spinach and 3 tbsp parmesan to the broth and mix well. Divide among four plates, sprinkle with remaining parmesan and serve.
