Spinach Cheesecake

Ingredients
- 500 g spinach
- Salt
- 4 Spring Onions
- 1 Garlic clove
- 200 g Cream cheese
- 150 ml whipping cream
- 4 eggs
- 100 g grated Gruyère cheese
- 100 g grated Parmesan
- Pepper
- nutmeg
- soft butter (for the pan)
- 250 g puff pastry
- 2 shallots

Wash, trim and briefly blanch the spinach in salted water. Cool, drain well and chop. Wash, trim and slice the spring onions into rings. Peel and finely mince the garlic. Whisk the cream cheese with the whipping cream and eggs until smooth. Mix in the Gruyère and Parmesan. Combine the spinach with the spring onions, garlic and half of the cheese mixture into the cream cheese base. Season with pepper, nutmeg and a pinch of salt.

Preheat the oven to 200 °C fan‑forced. Butter the quiche tin.

Roll out the puff pastry slightly larger than the tin and line it. Trim any excess edges. Spread the spinach mixture evenly over the pastry. Peel and slice the shallots into rings. Distribute them on top and sprinkle with the remaining cheese. Bake in the oven for about 50 minutes until golden brown.
