Ingredients
- 500 g fresh spinach leaves
- 200 g ricotta
- 1 tbsp flour
- 2 Eggs
- Salt
- Pepper (freshly ground)
- nutmeg
- 150 g butter
- 50 g freshly grated Parmesan
- 0.5 bunch Basil
Instructions

Wash, trim, and remove thick stems from the spinach; let it drip dry in a colander after rinsing with cold water, then squeeze out excess moisture and finely chop.

Stir the chopped spinach into ricotta, flour, and eggs; season with salt, pepper, and nutmeg. Using a teaspoon, scoop portions of the mixture and shape them into balls with wet hands.

Bring 2 L lightly salted water to a boil; gradually add the balls and simmer gently for 6–8 minutes until they rise to the surface. Remove and drain on paper towels.
