Spicy Yogurt Soup with Peach and Shrimp Tail

Ingredients
- 2 Tomatoes
- 3 ripe peaches
- 2 stalks lemon verbena
- 1 red chili pepper
- 1 Green Chili Pepper
- 600 g natural yogurt
- 200 ml vegetable broth
- 1 tbsp Lemon Juice
- Salt
- ground black pepper
- sugar
- 4 large shrimp (ready-to-cook, peeled and deveined)
- 2 tbsp olive oil

Blanch the tomatoes, shock in ice water, peel, quarter, seed, and dice finely. Peel the peaches, halve, seed, and dice small. Wash the herbs, dry, shake off leaves, and finely chop.

Wash the chili peppers, cut lengthwise, seed, and finely chop. Mix with herbs, peaches, and tomatoes; divide into four bowls. Whisk yogurt with broth and lemon juice, season with salt, pepper, and a pinch of sugar.

Wash shrimp, pat dry, season with salt and pepper, then sear in a hot pan with oil until golden on all sides. Pour the yogurt soup over the salad in the bowls and serve each topped with a seared shrimp.
