Ingredients
- 1 tbsp oil
- 1 stalk lemongrass
- 0.5 Red chili pepper
- 1 piece fresh ginger (about 3 cm)
- 1 l fish stock
- 1.5 tbsp fish sauce
- 4 scallops (pre‑cooked)
- Salt
- ground pepper
- 1 tbsp lime juice
- Basil
- cilantro
Instructions

Remove the outer leaves of the lemongrass and finely chop it. Wash, deseed, and slice the chili into thin rings. Peel the ginger and shave it into very fine slices.

Bring the lemongrass, chili, and fish stock to a boil; add the fish sauce and ginger and simmer for about 10 minutes. Season with lime juice, salt, and pepper.
