- 2 onions
- 1 Garlic clove
- 250 g Chorizo (Spanish paprika sausage)
- 3 tbsp olive oil
- 400 g Potatoes
- 1 bundle vegetable mix
- 2 carrots
- 2 cans peeled tomatoes
- 0.5 l vegetable broth
- 1 bay leaf
- Salt
- pepper (ground)
- 1 can chickpeas
- 1 tsp Dried oregano
- parsley (fresh)
- 1 cup crème fraîche
Instructions

Peel onions and garlic. Slice onions lengthwise into wedges, chop garlic. Peel sausage if necessary and cut into slices.

Peel and dice potatoes. Wash, trim, and finely chop the vegetable mix. Peel carrots and slice into thin half-moons.

In a pot briefly brown sausage slices in olive oil, add onions and garlic, cook until translucent.

Add potatoes, vegetable mix, carrots, canned tomatoes, broth, bay leaf, oregano, and season with salt and pepper.

Cover and simmer for about 30 minutes over low heat. Drain chickpeas, add to the stew, warm through, adjust seasoning, and serve garnished with parsley and crème fraîche.
