Ingredients
- 1 Zuckermelone (e.g., Charentais or Galiamelone)
- 250 ml chicken broth
- 2 carrots
- Salt
- 1 Zucchini
- 150 g crème fraîche
- Cayenne pepper

Halve the melon, remove seeds, peel and dice the flesh. Bring to a boil with the broth and simmer for 10 minutes until the flesh is completely soft. Let cool briefly, blend in a mixer, then strain through a sieve.

Meanwhile, peel and dice carrots and zucchini. Blanch carrots for 5 minutes in boiling salted water, then add zucchini and cook for another 2 minutes before draining.

Mix the melon purée with crème fraîche, heat gently while stirring, but do not boil again. Season with salt and cayenne pepper, then fold in the carrot and zucchini cubes.
