Ingredients
- 1 onion
- 20 g Ginger
- 3 Garlic cloves
- 1 stalk lemongrass
- 4 chili peppers (optional more or less)
- 1 red bell pepper
- 500 g tomatoes
- 2 tbsp Ghee
- 1 tsp turmeric
- 750 ml vegetable broth
- 1 Lime (juice)
- 1 tsp garam masala
- Salt

Peel and finely dice the onion, ginger, and garlic.

Lightly pound the lemongrass. Drain the chilies, deseed if desired, and slice into thin rings.

Wash, trim, and cut the bell pepper into triangular pieces. Cut tomatoes into wedges, removing stems.

Heat ghee in a large pot over high heat and sauté onion, ginger, chilies, and garlic until translucent. Sprinkle turmeric, add lemongrass, and cook briefly more.

Deglaze with vegetable broth, then add tomatoes and bell pepper; simmer gently for about 10 minutes. Season with lime juice, garam masala, and salt. Serve with flatbread.
