- 1 cucumber
- 1 red chili pepper
- 3 stalks coriander
- 3 stalks scallion
- 2 cm ginger
- 4 Tbsp sunflower oil
- 2 tbsp white balsamic vinegar
- 1 tsp lemon juice
- Salt
- black pepper (freshly ground)

Wash the cucumber, trim the ends, halve it lengthwise and shave into thin slices. Wash the chili, halve it, remove seeds and white membranes, then dice. Rinse coriander and scallion, shake dry and roughly chop. Peel the ginger, cut into small cubes, sauté in oil until fragrant, then let cool. Whisk vinegar and lemon juice together, season with salt and pepper, and pour over the cucumber slices. Fold in chili and coriander.
