Spicy Couscous Soup
The spicy couscous soup from Spoonsparrow is always delicious!
Ingredients
- 2 red onions
- 1 Zucchini
- 3 tomatoes
- 5 tbsp sunflower oil
- 1 tbsp Tomato Paste
- 2 tsp paprika powder (spicy)
- 50 g Couscous
- 800 ml vegetable broth
- 100 g white beans (drained weight; canned)
- 1 Shallot
- 400 g ground lamb
- 20 g breadcrumbs (2 tbsp)
- 1 egg
- Salt
- Pepper
Instructions

Peel the onions and dice them finely. Wash, trim, and cube the zucchini.

Heat tomatoes in boiling water, drain, cool, peel, quarter, seed, and dice them small.

Heat oil in a pot. Sauté onion cubes over medium heat until translucent. Add zucchini and tomato cubes and cook for 3 minutes.

Add tomato paste, paprika, couscous, and broth; bring to a boil and simmer gently for about 10 minutes.

Meanwhile, drain the beans, rinse under cold water, and let them dry.

Peel the shallot and dice it finely. Mix with ground lamb, breadcrumbs, egg, salt, and pepper; shape into small balls with damp hands.

Add the meatballs and beans to the soup and simmer gently for about 10 minutes until cooked. Season with salt and pepper.
