Spicy Cookies with Caraway and Thyme

Ingredients
- 300 g flour
- 1 pinch salt
- 1 egg
- 200 g butter
- 0.5 bunch thyme
- flour (for the work surface)
- 1 egg yolk
- Sea salt
- caraway seeds (optional)

Mix flour with salt, sift onto a work surface, make a well in the center and crack the egg into it. Distribute butter pieces around the well and use a knife to crumble all ingredients together. Quickly knead by hand into a smooth dough, shape into a ball and wrap in cling film; refrigerate for 30 minutes.

Preheat oven to 180°C fan. Wash thyme, pat dry and remove leaves from stems. Roll out dough on floured surface, cut shapes as desired and place on parchment-lined baking tray.

Brush with beaten egg yolk and sprinkle with sea salt, caraway seeds and thyme leaves; bake for 10-12 minutes in the preheated oven. Remove finished cookies and serve cooled.
