Spicy Caribbean Banana Soup

Ingredients
- 1 onion
- 1 stalk Celery
- 1 Carrot
- 1 chili pepper
- 2 cloves garlic
- 2 cooking bananas
- 3 tbsp Sesame oil
- 200 ml orange juice
- 200 ml vegetable broth
- 200 ml coconut milk
- 1 can saffron powder
- Cayenne pepper
- onion sprouts for garnish (or other sprouts)

Peel and finely chop the onion. Clean, wash, and slice the celery stalk into thin strips. Peel and slice the carrot into fine rounds. Wash the chili, halve it lengthwise, remove seeds, and finely chop. Peel and finely chop the garlic.

Dice the cooking bananas. Sauté onions, celery, carrot, garlic, and chili in sesame oil. Add the bananas and stir briefly. Deglaze with orange juice, vegetable broth, and coconut milk.

Bring to a boil and simmer on low heat for about 20 minutes. Puree the soup very fine with an immersion blender. Season with saffron, cayenne pepper, and salt, then serve garnished with onion sprouts.
