Ingredients

  • 50 g sunflower seeds
  • 1 cube yeast
  • 350 ml lukewarm water
  • 2 tsp herb salt
  • 2 tbsp Rapeseed oil
  • 350 g finely ground spelt
  • 150 g kamut
  • 2 carrots
  • 2 Spring Onions
  • 1 egg yolk
  • 1 tbsp milk
  • 25 g sunflower seeds

Instructions

    Soak sunflower seeds overnight in water. Stir yeast with a little water until smooth. Add remaining water, salt and oil. Mix in flour, knead the dough vigorously with the beaters of an electric hand mixer, then cover and let rise in a warm place for about 30 minutes.

    Peel and grate carrots. Wash spring onions, trim them and cut the white and light green parts into fine strips.

    Knead the dough again on a floured surface, then fold in grated carrots, sliced spring onions and well-drained sunflower seeds.

    Shape into a loaf and place in a greased loaf pan. Whisk egg yolk with milk and brush the loaf, sprinkling sunflower seeds on top. Let rise for another 15 minutes.

    Bake in a preheated oven at 200°C for 10 minutes, then reduce to 180°C and bake for an additional 40 minutes. Place a bowl of boiling water in the oven during baking.
