  • 5 eggs
  • 1 tsp salt
  • a pinch of freshly grated nutmeg
  • 20 g herbs (1 bundle; e.g., rosemary and parsley)
  • 60 g Butter
  • 15 g ground hazelnuts (1 tbsp)

Instructions

Season with 1 tsp salt and a little freshly grated nutmeg, then mix vigorously with a hand mixer or wooden spoon until a thick, bubble‑forming dough forms. Add a splash of cold water if needed; the dough should fall off the spoon in strands. Let rest for about 10 minutes.
