- 350 g whole wheat spelt flour
- 5 eggs
- 1 tsp salt
- a pinch of freshly grated nutmeg
- 20 g herbs (1 bundle; e.g., rosemary and parsley)
- 60 g Butter
- 15 g ground hazelnuts (1 tbsp)

Add the flour to a bowl and beat in the eggs. Season with 1 tsp salt and a little freshly grated nutmeg, then mix vigorously with a hand mixer or wooden spoon until a thick, bubble‑forming dough forms. Add a splash of cold water if needed; the dough should fall off the spoon in strands. Let rest for about 10 minutes.
