Spare Ribs with French Fries

Ingredients
- 2 kg pork ribs
- 2 onions
- 2 Garlic cloves
- 2 tbsp plant oil
- 100 ml meat broth
- 0.5 orange (juice)
- 4 tbsp ketchup
- 1 tbsp spicy mustard
- 2 tbsp Soy sauce
- 1 tbsp Worcestershire sauce
- 1 tbsp paprika powder
- 0.5 lemon (juice)
- 1 tbsp freshly chopped ginger
- Salt
- Tabasco
- pepper (ground)
- 250 g frozen French fries
- Salt
- vegetables (cut into sticks)
- mayonnaise
Instructions

Wash the spare ribs, pat dry and place in a pot, cover with boiling water. Peel and halve one onion and one garlic clove, add to the water. Simmer for about 30 minutes. Heat oil in a pan. Peel and finely dice the second onion, sauté in hot oil. Add minced garlic. Pour in broth and orange juice, reduce slightly.

Transfer to a bowl and mix with ketchup, mustard, soy sauce, and Worcestershire sauce. Stir in paprika powder, lemon juice, and ginger. Season with salt, Tabasco, and pepper. Remove ribs from the liquid and place on the grill. Brush with barbecue sauce and grill for 15-20 minutes until done.

Brush with more marinara repeatedly and flip as needed. Arrange fries on a parchment-lined baking sheet and bake in a preheated oven at 200°C for 10-15 minutes until golden brown. Remove, season with salt, and serve the ribs, vegetable sticks, and a small bowl of mayonnaise in a basket.
