Ingredients
- 500 g tomatoes
- 1 Shallot
- 1 clove garlic
- 2 tbsp olive oil
- Salt
- Pepper (freshly ground)
- 1 tsp sugar
- 200 g spaghetti
- 4 tbsp parmesan
Instructions

Blanch tomatoes for a few seconds, shock in cold water, peel, quarter, seed and dice finely.

Sauté shallot and garlic in hot oil until translucent, add tomatoes, season with salt, pepper and sugar, cover and simmer over low heat for about 15 minutes, taste.

Cook spaghetti in plenty of boiling salted water to al dente.

Drain noodles, let them dry briefly, then toss immediately with the tomato sauce. Sprinkle with parmesan and serve.
