Ingredients
- 500 g ripe tomatoes
- 1 Shallot
- 1 Garlic clove
- 2 tbsp olive oil
- Salt
- Pepper (freshly ground)
- 1 tsp sugar
- 200 g spaghetti
- basil (for garnish)

Blanch the tomatoes for a few seconds, shock in ice water, peel, quarter, seed and dice finely. Peel and finely chop the shallot and garlic.

Sauté the shallot and garlic in hot oil until translucent, add the tomatoes (reserve about 2 tbsp), season with salt, pepper and sugar, cover and simmer over low heat for about 15 minutes, tasting as you go.

Cook the spaghetti in plenty of boiling salted water until al dente.

Drain the pasta, let it dry briefly, then immediately toss with the tomato sauce and reserved tomatoes. Serve garnished with basil.
