Spaghetti Carbonara

Ingredients
- 400 g spaghetti
- 100 g thick-cut bacon
- 2 tbsp olive oil
- 2 Garlic cloves
- 3 eggs
- 4 tbsp heavy cream
- Salt
- Pepper
- 75 g Parmesan
- 0.5 bunch Chives

Cook spaghetti in a pot of plenty boiling salted water until al dente (about 9-10 minutes).

Meanwhile, cut bacon into small strips. Heat olive oil in a large skillet. Add bacon and fry for 2–3 minutes over medium heat. Peel and finely chop garlic cloves, add to the bacon and sauté together.

Whisk eggs, cream, salt, and pepper with a fork or whisk. Grate parmesan and wash chives, dry and cut into ribbons. Stir in 30 g parmesan and the chives.

Drain spaghetti, let it drain well, and immediately toss it in the skillet. Mix thoroughly in the bacon fat, then remove the skillet from heat.

Pour the egg mixture over the hot pasta and quickly stir to combine. Season with plenty of freshly ground pepper, sprinkle with remaining parmesan, and serve.
