- 100 g dried soybeans
- 1 tsp brown sugar
- 120 g tofu
- chervil (for garnish)

Finely chop the soybeans in a food processor. Bring 1 l of water to a boil in a pot and simmer for about 20 minutes. Strain through a fine sieve, sweeten with sugar to taste, and let cool. Refrigerate for about 1 hour. Cut the tofu into cubes and arrange on glasses. Carefully pour the soy juice over the tofu and serve garnished with chervil.
