Sour Zucchini

Ingredients
- 1 large onion
- 150 g Carrots
- 150 g celeriac
- 2 tbsp plant oil
- 50 ml brandy vinegar
- 1.2 l poultry broth
- 1 tbsp juniper berries
- 1 tbsp black peppercorns
- 2 Bay leaves
- 600 g Nuremberg roasted sausage
- Salt
- Pepper
- a pinch sugar
- nutmeg (freshly ground)
- 100 ml whipping cream
- 2 tbsp chopped parsley
- parsley (for serving)
Instructions

Peel and clean the onion, carrots, and celeriac. Dice everything finely. Sauté in hot oil in a large pot. Deglaze with vinegar and broth.

Add juniper berries, peppercorns, and bay leaves (optionally in a tea bag) to the broth. Simmer gently for about 10 minutes.

Slice the sausages diagonally into approximately 1/2 cm thick slices. Reduce heat so the soup no longer boils. Add sausage slices and let them steep for about 5 minutes. Season the broth with salt, pepper, sugar, and nutmeg. Then strain through a sieve, catching the sour zucchini and vegetables. Remove the spices.

Return the broth to the pot, whisk in the cream carefully, fold in chopped parsley. Divide among four soup bowls, add sausage and vegetables, garnish with parsley, and serve.
