Ingredients
- 3 onions
- 170 ml white wine vinegar
- 1 bay leaf
- 3 crushed juniper berries
- 10 white peppercorns
- 1 tsp salt
- 16 raw Nuremberg roast sausages
Instructions

Peel the onions and cut them into rings.

Add 750 ml water to a large pot and heat with the vinegar. Then add the onions, bay leaf, peppercorns, juniper berries, and salt. Simmer on low heat for about 20 minutes.

Place the roast sausages in the liquid, cover the pot, remove from heat immediately, and let the sausages steep for about 15 minutes.

Transfer the finished sausages (they should feel firm) to a large terrine. Serve the sour bites with freshly grated horseradish, mustard, and whole‑grain bread.
