Ingredients

  • 4 tbsp butter
  • 70 g grünkern groats
  • 1.2 l Vegetable broth
  • 1 bunch soup vegetables
  • 1 Shallot
  • Salt
  • Pepper (freshly ground)
  • nutmeg
  • 0.5 bunch Parsley
  • 4 tbsp Sour cream

    Melt 2 tbsp butter in a pot, add the grünkern groats, toast until fragrant, then deglaze with broth. Simmer for 20-25 minutes over medium heat, stirring occasionally. Meanwhile, peel and finely dice the soup vegetables into very small cubes. Peel the shallot and dice it finely.

    Heat the remaining butter in a pan and sauté the onion and vegetable cubes for 2-3 minutes. Add to the soup, simmer for another 5-8 minutes, and season with salt, pepper, and nutmeg.
