- 10 eggs
- 100 g crème fraîche
- 2 tbsp freshly chopped thyme
- nutmeg
- Pepper (freshly ground)
- Salt
- 150 g smoked salmon (sliced)
- 2 tbsp butter

Preheat the oven to 180°C with fan and top heat.

Whisk the eggs with crème fraîche and thyme. Season with nutmeg, pepper, and a pinch of salt. Pour into a tart or gratin dish lined with parchment paper. Break the salmon into pieces, distribute over the egg mixture, dot with butter shards, and bake in the oven for about 25 minutes until golden brown.
