Ingredients
- 800 g green asparagus
- 1 tbsp Olive Oil
- Salt
- Pepper
- 2 tbsp lemon juice
- 8 slices smoked salmon

Peel the lower third of the asparagus and sauté the spears in a hot pan with oil on all sides. Season with salt and pepper, add a splash of water, cover and steam gently for about 10 minutes until tender yet crisp.

Finally drizzle lemon juice over the asparagus, swirl, and allow the liquid to evaporate again.

Serve each plate topped with 2-3 slices of smoked salmon.
