Small Tart with Red Onion

Ingredients

  • 400 g puff pastry
  • 4 red onions
  • 1 handful mixed salad greens of choice (e.g., arugula, lamb's lettuce)
  • 100 ml balsamic vinegar
  • 2 tbsp olive oil
  • Salt
  • pepper (from grinder)

Instructions

    Cut four circles from the puff pastry using a round cutter with a diameter of about 12 cm.

    Peel and halve the onions, then slice them into thin strips, but leave each half connected at the end so it stays together and cooks evenly.

    Reduce the balsamic vinegar slightly while stirring occasionally.

    Brush the pastry circles with olive oil, top each with two onion halves (leaving a small border), and drizzle with half of the reduction. Place on a baking sheet lined with parchment paper and bake in a preheated oven at 200°C fan-forced for about 10-15 minutes until golden brown.

    Clean the salad greens and arrange them on plates. Add the onion tarts and drizzle with the remaining balsamic vinegar. Sprinkle with salt and pepper before serving.
