Small Rye Flammkuchen with Chive Rolls

- 21 g fresh yeast
- 1 tsp sugar
- 100 g whole wheat rye flour
- 400 g wheat flour type 1050
- 1 tsp salt
- 2 tbsp Vegetable oil
- flour (for working)
- 2 onions
- 300 g bacon (sliced)
- 250 g sour cream
- 200 g crème fraîche
- 1 egg yolk
- Salt
- pepper (ground)
- a handful of chives

Crush the yeast and dissolve it in 5 tbsp lukewarm water with sugar. Let stand for about 10 minutes. Combine the flours with salt, oil, and yeast, adding approximately 250 ml lukewarm water to form a smooth dough that releases from the bowl. Add more flour or water if needed. Cover and let rise for at least 1 hour.

Preheat the oven to 200°C (400°F) with upper and lower heat.

Peel and finely dice the onions. Cut the bacon into strips or dice it.

Knead the dough again on a floured surface, divide into 8 pieces, and shape into long flat discs. Place them on two baking sheets lined with parchment paper, cover, and let rest for about 10 minutes. Whisk together sour cream, crème fraîche, and egg yolk; season with salt and pepper. Spread the mixture over the dough discs and top with bacon and onions.

Bake in the preheated oven for about 25 minutes. Wash, dry, and cut chives into thin rolls. Remove the flammkuchen from the oven and serve on a wooden board sprinkled with chive rolls.
