Ingredients

  • 2 egg whites
  • 150 g buckwheat flour
  • 150 g all‑purpose flour
  • 1 pinch salt
  • 0.5 cube fresh yeast
  • 450 ml lukewarm milk
  • 2 tbsp liquid butter
  • butter fat (for frying)
  • caviar (optional)
  • 200 g smoked salmon (sliced)
  • 200 g Sour Cream

Instructions

    Separate the eggs. Mix both flours together. Dissolve the yeast in the milk and stir it into the flour mixture with the liquid butter and salt, then knead into a smooth dough. Cover and let rise in a warm place.

    Meanwhile beat the egg whites until stiff peaks form, then fold them into the dough before baking.

    Heat some butter fat in a pan, drop spoonfuls of dough, flatten slightly, and fry each side until golden brown. Serve garnished with caviar, salmon slices, and sour cream.
