Small Plum Galette
Try the small plum galette from Spoonsparrow or one of our other Spoonsparrow cakes!
Ingredients
- 100 g buckwheat flour
- 150 g spelt flour (Type 1050)
- 150 g cold butter
- 50 g honey
- 1 egg
- 1 pinch salt
- 0.25 tsp vanilla powder
- 6 ripe plums
- 1 tsp cinnamon powder
- 4 tbsp plum jam

Knead buckwheat and spelt flour, chunky butter, honey, egg, salt and vanilla powder into a smooth shortcrust dough quickly. Wrap in cling film and chill for about 30 minutes.

Meanwhile wash the plums, halve them, pit and cut into wedges. Mix with cinnamon.

Divide the dough into 8 equal portions and roll each into a round (15 cm diameter) on a floured work surface; spread plum jam over it, arrange the plum wedges fan‑shaped on top leaving a 1.5 cm border. Fold the edge toward the center, press with thumbs and place the galette on a baking sheet lined with parchment paper. Bake in a preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for 25–30 minutes until golden brown. Remove and serve warm or cold.
