Ingredients
- 4 sour apples
- 3 tbsp Lemon juice
- 4 eggs
- 1 pinch salt
- 125 g sugar
- 120 g flour
- 25 g cornstarch
- 50 g ground walnuts
- 125 ml milk
- 125 ml whipping cream
- butter (for the pan)
- 2 tsp brown sugar
- zinc‑cinnamon mixture (optional for garnish)
Instructions

Wash the apples, halve them and remove the core. Cut into wedges and drizzle with lemon juice. Separate the eggs; beat the whites with a pinch of salt until very stiff. Beat the yolks with the sugar until fluffy.

Mix the flour with the cornstarch and ground walnuts, then alternately stir in the milk and cream into the yolk mixture until a smooth batter forms. Finally fold in the stiffly beaten egg whites.
