Ingredients

  • 800 g turkey breast fillet (ready to cook)
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp clarified butter
  • 1 tsp juniper berries
  • 1 tsp peppercorns
  • 20 g butter
  • 2 tbsp honey
  • 1 tsp sweet paprika
  • 2 tbsp pickled blackcurrants

Instructions

    Preheat the oven with a ceramic or porcelain roasting pan to 80°C fan.

    Rinse the turkey, pat dry, season with salt and pepper, then sear all sides in hot clarified butter for 5-6 minutes. Transfer to the roasting pan. Crush juniper berries with peppercorns in a mortar, then add butter, honey, and paprika to a small pot and warm. Brush the melted spice mixture over the turkey and roast for about 3 hours (internal temperature 70°C).

    Transfer to a plate, garnish with pickled blackcurrants, and slice thinly before serving.
