Ingredients

  • 500 g waxy potatoes
  • Salt
  • 4 vegetable onions
  • 2 ripe apples (e.g., Boskoop)
  • 2 tbsp lemon juice
  • 600 g blood sausage
  • 100 g butter
  • pepper (ground)
  • 120 ml lukewarm milk
  • nutmeg

Instructions

    Peel, wash, and boil the potatoes in salted water for 25-30 minutes. Peel the onions and slice into thin rings. Peel the apples, slice thinly, and drizzle with a little lemon juice.

    Remove the blood sausage from its casing and cut into 3 cm thick slices. In a pan, melt 30 g butter and fry the sausage for about 10 minutes, turning occasionally. Season with salt and pepper.

    In a second pan, melt another 30 g butter and cook the apple slices for 6-8 minutes on each side until golden yellow. Remove and keep warm. Then brown the onion rings in the same pan until golden brown.

    Drain the cooked potatoes, let them steam dry, then mash through a potato press. Stir in the milk and remaining butter, seasoning with salt, pepper, and nutmeg to taste. Plate the mash alongside the blood sausage and apple slices on warmed plates, drizzle with browned butter, and garnish with the onion rings.
