Simple Pea Soup

A quick and healthy pea soup from Spoonsparrow that is tasty and nutritious.

Ingredients

  • 50 g parsley root
  • 0.5 stalk leek
  • 1 onion
  • 1 tbsp butter
  • 500 g peas (fresh or frozen)
  • 600 ml Vegetable Broth
  • 4 radishes
  • 125 ml heavy cream
  • Salt
  • pepper (ground)
  • 40 g goat fresh cheese
  • 2 tbsp chives sprigs

Instructions

    Clean and cut the parsley root and leek into small pieces. Peel and chop the onion. Sauté the vegetables and onions in hot butter, add the peas, pour in the vegetable broth, and bring to a boil. Simmer everything over low heat for about 20 minutes until tender.

    Meanwhile, clean, wash, and slice or shave the radishes thinly. Puree the soup, strain through a fine sieve if desired, stir in the cream, reheat, and season to taste.

    Serve the pea soup in four deep bowls, garnished with goat cheese, radish slices, and chives.
