Siberian-Style Meat-Filled Pastry

Ingredients

  • 200 g Flour
  • 1 egg
  • 70 ml water
  • Salt
  • 1 onion
  • 3 Garlic cloves
  • 200 g Ground beef
  • 2 tbsp instant beef broth
  • Salt
  • ground pepper
  • 1 Egg white
  • 120 g butter

Instructions

    Knead a smooth dough from flour, egg, water and salt; roll it out to about 2 mm thickness on a lightly floured surface and cut circles of 5 cm diameter.

    Peel and roughly chop onion and garlic. Pass the minced meat, onion and garlic through the fine sieve of the meat grinder twice more, then mix with broth into a smooth paste and season with salt and pepper.

    Spread the meat mixture onto the dough circles, leaving a border; brush the edge with egg white and press firmly to seal. Turn the halves together. Boil in plenty of salted water over low heat for 4–5 minutes.

    For serving, melt butter in a small pot. Arrange the pastries on plates and drizzle with butter. Serve with a fresh salad.
