Ingredients
- 750 g shrimp (peeled and deveined)
- 3 tbsp Flour
- 500 g tomatoes (deveined, seeded, coarsely diced)
- 1 Shallot
- 1 Garlic clove
- 8 tbsp olive oil
- 1 tbsp Tomato Paste
- 2 tbsp capers
- 1 pickled cucumber (finely chopped)
- 2 tbsp parsley (finely chopped)
- 100 g butter
- juice of one lemon
Instructions

Sauté the shallot and pressed garlic in 2 tbsp olive oil, add diced tomatoes and tomato paste, season with salt and pepper, and simmer.

Season shrimp with salt and pepper, coat in flour, and fry in remaining oil in batches for about 4 minutes until golden brown; set aside warm.

Melt butter, add parsley, cook briefly, then remove from heat.

Sprinkle shrimp with capers and chopped pickled cucumber, pour tomato sauce over, drizzle lemon juice, and finish with the parsley butter.
